About the Author

When my daughter announced she was becoming a vegetarian when she was 14, I worried that she would not get enough of the essential vitamins and minerals that come from meat. However, I learned that nuts, soy products and leafy green vegetables provide the protein needed. As she grew older, she started to gravitate towards veganism. Of course, as her mother, I had to learn to use substitutes for eggs, dairy and meat.
I recommend vegetable broth, soy, rice, almond and/or coconut milk to use as substitutes for eggs. This usually comprises of ¼ cup of the aforementioned to equal one egg. I also am providing PETA’s vegan baking cheat sheet for you to use:
Once you learn to use these substitutions, there will be no stopping you from converting your favorite family recipes into vegan friendly menus. I have provided 21 recipes from our family for you to try. I hope you enjoy them as much as the entire family does.
I would also like to acknowledge and thank my two daughters for their encouragement and technical expertise in gathering these recipes. This booklet would never have been created without them.
